Mint Raita (yoghurt) and rice are cooling, so just eat your curry with these to alleviate the heat. Drinking cold water may offer very short term relief, but after ten seconds you will feel the burn even more!

What do I do if my curry isn't hot enough?
Chop up some of those small red or green chillies and sprinkle these over your food. You can also add some hot lime pickle

How long can I keep the left-overs?
Generally Indian food keeps very well and, thanks to the spices, they often tastes better the next day! You can safely store curries in the fridge for 2/3 days. Samosas and bhajis can be refrigerated for longer in airtight containers. Rice should never be kept longer than 2 days

What should I drink with my curry?
